Here's my Default Domain Policy in Group Policy Management. How can I clear the settings so Folder Redirection doesn't even show up?

I have noticed that even if you set the Documents folder redirection setting back to "Not Configured", the setting is not actually cleared, it still remains in the policy as "Not Configured". The problem I have is that a consultant configured folder redirection on the Default Domain Policy and I want to remove those settings and place them in another policy. Is there a way to truly remove the folder redirection settings from a policy, I have seen that it creates an fdeploy.ini (or fdeploy1.ini) in the GPO's folder but deleting the files create an error when viewing the setting in Group Policy Management.

I've seen people do far worse to the Default Domain Policy and it not cause problems. If it really concerns you, you can restore the GPO from a backup or recreate it (there are several tutorials out there).
I'm hoping you've already talked to the consultant about modifying the Default Domain Policy since you did remove the setting.
I am still curious why once Folder Redirection is set the setting will never go away even when set to Not Configured? That differs from any other GPO settings which are set to Not Configured.
