Moving Users' Directed Folders by Hand?

I am migrating redirected folders to a new server. Right now, everything is working correctly. The first time a user logs in, their desktop and documents are being automatically moved to the appropriate new location as stipulated in my GPO. The problem is that some users are on extended leave, and won't be logging in for quite some time. I need to take the old server offline as soon as possible. How can I copy the remaining redirected folders, and all appropriate permissions to the new location without necessitating the users in question to logon?
